Casper Brunch and a Movie

Today, I’m sharing our Casper Themed Brunch to celebrate National Pancake Day on September 26th! 

We typically enjoy fun themed dinners in our house, but to take advantage of this pancake-loving holiday, I switched things up and planned a brunch menu instead!  And because now is the time to celebrate all things Halloween in our house, I decided to give our brunch a fun Halloween twist while we enjoyed the movie, Casper!

What does Casper and brunch have to do with each other, you ask?

In one of my favorite scenes from the film, Casper whips up an INCREDIBLE breakfast for his new housemates on their first morning together.  You know the one – the perfectly fried eggs, freshly squeezed orange juice, and those tall stacks of fluffy pancakes.  I’m getting hungry just thinking about it!  So, for our Casper Brunch, I based my menu on the breakfast Casper cooked up in his kitchen, while also making it undeniably Halloween for the kids!

The Beverages

In the film, Casper freshly squeezes orange juice for his new friends, and even strains out the pulp with plenty of ghostly pizazz.  So, of course, I had to serve orange juice with our meal.

I didn’t have the tools or a friendly ghost to help me freshly squeeze our orange juice, so I cheated and bought some from the store.  If you are equipped to make your own fresh squeezed orange juice – GO YOU!  Nothing beats fresh squeezed! 

We also had plenty of hot coffee for the adults – the beverage of choice for Dr. Harvey in the film.

The Eggs

Casper whips up some fried eggs in the kitchen for breakfast (and also becomes one later!), but I struggled with how I’d make them undeniably Halloween.  So, I decided I’d throw together an egg bake instead, and dye the eggs green.  Green is spooky, right?

I didn’t really follow a recipe for my egg bake.  I typically gather some cooked breakfast sausage, veggies, hashbrowns, eggs, and cheese. When ingredients are combined, I bake in the oven at 350 for about 30min until eggs are set.  Egg bakes are easy to throw together and are a great way to use up whatever ingredients you have on hand!

Our Healthy Side

My kids don’t get away without a healthy side at mealtimes.  For our Casper Brunch, I decided to serve up some fruit cups with grapes, blueberries, and raspberries.  But for our Halloween twist, I carved jack-o-lantern faces in orange peel bowls to hold the fruit.  It took a little thrifty knife work, but I absolutely LOVE how they turned out and the kids did too!

The Pancakes

And now, for the pièce de résistance (and our national holiday’s namesake) – the pancakes!  What is more fall than pumpkin pancakes?  And thanks to the Disney Parks Blog, we have this wonderful pumpkin pancake recipe from the Disney resorts!

For our Halloween spin, I used icing to create spider webs on the pancakes.  They were absolutely delicious!

My kids loved kicking off the day with a special themed brunch and a movie, which gave us plenty of time for other Halloween fun throughout the day!
