Crockpot Chicken Zucchini Noodle Soup
Today I am going to share this easy Crockpot Chicken Zucchini Noodle Soup with you! This soup makes a great healthy meal or side for your family. It is full of flavor, features fresh ingredients, and is very easy to assemble! You can’t beat the convenience and ease of cooking in your crockpot. Just toss in your ingredients, turn up the heat, and let the crockpot do the rest!
I created this Chicken Zucchini Noodle Soup recipe to serve on our Little Mermaid Dinner Night (you can check out our menu HERE). We topped it off with goldfish crackers to create the look of fish swimming through seaweed. This soup was a hit with the kiddos, which is always wonderful when serving up something healthy and full of vegetables!
Ingredients
This soup is full of fresh veggies and chicken. You can choose to use any seasonal vegetables you prefer; I chose the following as I knew they would go over well with my kiddos:
- 1-1.5lbs chicken breasts
- 9 cups chicken broth
- 3 large carrots, peeled and diced
- 5 stalks celery, diced
- 3-4 cloves garlic, minced
- 1 large leek, cleaned and trimmed, chopped
- 2 zucchini, spiralized
- 1 tsp salt
- 1 tsp pepper
- 1/2 tsp thyme
- 1/2 tsp rosemary
- 1 bay leaf
- 2 tsp chicken bouillon base
- fresh parsley, for garnish (optional)

Preparation
This Chicken Zucchini Noodle Soup is SO easy to prepare! Simply wash and chop your veggies for the crockpot. Place your chicken breasts on the bottom of your crockpot and top with your veggies, herbs and spices (reserving your zucchini noodles for the end of cooking time). Top everything off with your chicken broth and set your crockpot to LOW for 6-8 hours or HIGH for 3-4 hours.
Towards the end of cooking time, check your veggies to make sure they are tender and adjust any seasonings as you see fit. Remove your chicken breasts from the crockpot to a plate and shred. Once shredded, return to the crockpot along with your spiralized zucchini noodles. Cook for about 15 minutes more, or until the zucchini noodles are al dente. Top with fresh parsley and PRESTO! You have a simple, healthy soup to serve for dinner.
