Crockpot Alphabet “Hi Dad” Soup

This Crockpot Alphabet “Hi Dad” Soup recipe was inspired by the alphabet soup enjoyed in Disney’s A Goofy Movie. I LOVE using my crock pot, especially to make soups!  There is nothing easier than dumping in the ingredients, turning up the heat, and just leaving it be for a few hours.  Then PRESTO!  You have an amazing meal with very little preparation. 

We are making our Crockpot Alphabet Soup from scratch!  This version of “Hi Dad” Soup is made with fresh ingredients and is loaded with flavor.  It will be a hit with all ages, even those little ones who prefer not to each their veggies.  This soup also freezes well if you want to save some for a later date!  Don’t forget to leave each other messages with your alphabet noodles 😉

Ingredients

The goal for this Crockpot Alphabet Soup is to use fresh ingredients! You can use any seasonal vegetables you prefer. Here is a list of what I added, as I knew it would go over well with my kids!

  • 2 Carrots
  • 3 Stalks Celery
  • 1/2 White Onion
  • 14.5oz can Diced Tomatoes (Yes, I cheated and used canned here!)
  • 2 Cloves Garlic

I chose to use a prepared vegetable broth for my soup. You can certainly substitute chicken or beef broth if that is the flavor profile you prefer! And of course, if you can make your own broth or stock I HIGHLY recommend you do so!

For my seasonings and spices, I used the following:

  • 2 bay leaves
  • ½ tsp paprika
  • 1 tsp salt
  • ¼ tsp each of thyme, basil, oregano, and black pepper
  • ¼ cup fresh parsley, chopped

And of course we needed alphabet noodles! I had some trouble finding alphabet noodles ay my local grocery story. Luckily, there are plenty of options available online to give you that cozy experience of “Hi Dad” Soup from A Goofy Movie. You can order the same noodles I did from Amazon by clicking HERE!

Preparation

In an effort to keep things as simple as possible, I decided to make this soup in the crockpot!

After your veggies are diced and ready to go, dump them into the crockpot with your herbs and seasonings (hold off on the noodles and fresh parsley until you are ready to serve). Cover the veggies and seasonings with your stock of choice, and set the crockpot to your desired heat level. I combined my soup earlier in the morning, so I set my crockpot to the LOW setting. Expect the soup to take 6-8 hours on LOW and 4-6 hours on HIGH.

Towards the end of cooking time, check your veggies to make sure they are tender and adjust any seasonings as you see fit. When you think your soup is ready to go, it’s time to start cooking those alphabet noodles!

I prefer to cook my noodles over the stovetop (as opposed to in the crockpot), so I can make sure they are cooked to a perfect al dente. Follow your packaging instructions, and once the noodles are prepared to your liking, transfer to the crockpot with your chopped fresh parsley.

Give your soup one final stir, remove the bay leaves, and ENJOY! There you have it – a simple, healthy dinner the whole family can enjoy.
