Easy Crockpot Irish Stew

Our St Paddy’s Day celebrations aren’t complete without a big bowl of Irish Stew!  It’s warm, filling, comfort food at its finest.  This Easy Crockpot Irish Stew recipe is a favorite of mine because it can be quickly assembled and then left alone to do its thing for most of the day.  You can even combine the stew ingredients the night before, store in the refrigerator, then dump in the crockpot when you are ready to start cooking!  You can’t beat the convenience and ease of cooking in your crockpot.  Just toss in your ingredients, turn up the heat, and let your crockpot do the rest!

Easy Crockpot Irish Stew

Ingredients

I like to use fresh ingredients whenever possible.  To assemble this stew, you will need the following:

  • 2-3lb beef chuck roast (seasoned with salt and pepper), cut into bite sized pieces
  • 2 medium white onions, diced
  • 4 Yukon Gold Potatoes, diced into 1″ cubes
  • 4 stalks celery, chopped
  • 5 medium carrots, chopped
  • 1 parsnip, chopped
  • 4 cloves garlic, minced
  • 4 cups beef broth (plus 1 beef bouillon cube for extra flavor)
  • ¼ cup tomato paste
  • 16oz Guinness
  • 2 Tbl Worcestershire sauce
  • 1 tsp Kosher salt
  • 1 tsp sugar
  • 1/2 tsp black pepper
  • 1 tsp thyme
  • 1 tsp rosemary
  • 2 bay leaves
  • 3 Tbl butter and 3 Tbl flour (to prepare a roux)

Preparation

  1. Season your beef chuck roast generously with salt and pepper.  Heat oil in a skillet at medium-high heat and sear each side of the beef before adding to the crockpot.
  2. Into the crockpot, combine all ingredients with the beef EXCEPT the butter and flour.  Give a good stir and cook on LOW for 6 hours.
  3. After 6 hours, gather your butter and flour to make a roux.  Heat a small saucepan over medium high heat on the stove.  Melt 3 tablespoons of butter until nice and bubbly, then slowly add 3 tablespoons of flour.  Stir the roux until smooth and it reaches a caramel color. 
  4. Add your roux to the crockpot and continue cooking for an additional hour until your stew has thickened.  Once thickened, serve with a thick slice of Irish Soda Bread and Enjoy!
